Banana Cinnamon Muffins

So in our other post Vegan Strawberry Shaped Strawberry Cake filled with Chopped Strawberry’s and Chocolate Ganache!!!! I told you I would post these so here you go. Banana Cinnamon Muffins made by me with a recipe from Skinny Bitch: Ultimate Everyday Cookbook by Kim Barnouin. 

Story behind why I made these you wonder? I had some left over banana’s that I was going to make into banana bread but I started looking in my cookbooks and saw the picture she had of them. So I gave my husband a choice banana bread, banana cinnamon muffins or something else banana (the name doesn’t really matter does it?) and he goes them and points to the picture so that’s what I made.
Look at those photo’s (Now the pictures in the book looks better/cleaner/nicely made) but still they came out great (kitchen was messy with brown sugar everywhere because I had some issues but that’s nothing new for me). They look so good don’t they? Now I know you want to make them so all you need is the Skinny Bitch: Ultimate Cookbook and all the ingredients and just make them and of course let me know what you think!

Watermelon and Red Onions!!!

Well since it’s Memorial Day  tomorrow ( Which I must say a huge THANK YOU) to all who severed and are serving our country!!!) . I wanted to give everyone something easy to make that you can bring to a BBQ. What better to bring then Watermelon..with a surprise in it.  Now I know most people who read that titled are gross out. Watermelon and Onions aren’t supposed to go together but surprisingly it works. My Uncle was at a chef school and came to a family gathering with a huge bowl of cut up watermelon and red onions. I told him that looks nasty but my dad said it was good to try it so  I had to try it and  I LOVE IT!!!! So years later I told my hubby about it and made him try it. He liked it too!  

Ingredients:
1 – Watermelon
1 – Red Onions
Salt and pepper (To Taste) I don’t use any but most people do.
Directions:
  1. Cut up watermelon into chucks
  2. Cut up red onions into slices
  3. Mix watermelon and onions together
  4. Add a little salt and pepper if you want, I don’t.
  5. This is best if you leave it in your fridge overnight to really get the juices to mix together.
  6. Enjoy!!!

Vegan Eating on Vacation!!!

It’s been a long time since I last wrote…Bad me 😦 but I’ve been super busy. I know no excuse not to write! I will do better.

Anyways we just got back from vacation and I thought this would be a perfect time to talk about traveling and eating vegan.
  1. Of course you could stop at restaurants and ask the chef to make you something special. Most cases they will if they have food you can eat but remember they are making you something special so they may charge a higher price then you want or expect to pay.
  2. Stay at hotels that have a full kitchen. You can bring your own food or stop at a grocery store and pick up some food to cook once you get to where your going.
  3. If you can’t find a full kitchen and your up to camping this is a great way too. All you need to bring is plates, cups, silverware and a skillet.We got a skillet for about $30 and you can cook anything in it. We have done pasta, breakfast scramble, vegan sausage, pancakes, grilled vegan cheese, dinners and even fried tater tots and french fries. (You can also use your skillet at home to cook with. It’s super easy, cooks multiple meals in the same pan, cleans easy and is just AWESOME). Also, TVP is a good thing to bring with you. All you do it add water and cook and there’s your meat like item. But remember this way food will only last a few days in a cooler so your best bet it to shop for only a few days at a time so your food doesn’t spoil (Expect TVP is dried so it will last as long as you need). We have even brought a mini fridge camping before. What can I say we camp in style.
  4. Another options is getting a hotel with a microwave (and fridge if you can). I know microwave aren’t the best but when you’re traveling it’s hard to eat healthy all the time. You can just get pre-package microwaveable dinners, soups, homemade foods you made before you left. Any stuff that is easy and quick to heat up. Also most hotels have a coffee maker so you can bring pre-packages foods that just need water…so you brew the water in your coffee pot and there you go…instant food.
Now that’s all great options for when you’re at your hotel but says you’re at an amusement park…how do you eat there???
  1. Of course you could still use option # 1 from above and have them make you something special.
  2. You can also check to see what the places allows you to bring in when you have a special diet. I know that Disney World and Universal studio allow a soft sided cooler with food that doesn’t need to be heated up.
  3. If your allow to leave and return to the park you could also go back to your hotel, or keep a cooler in your vehicle so when you get hungry just go back to your vehicle eat and return to the park.
So all that might be great ideas but if you can’t think of anything to bring in the park with you then that’s no good so here’s some ideas for you that we do.
